Make this ahead for a meal that doesn’t require heating up the kitchen.

  • 1 fryer chicken
  • 1 (12 oz.) pkg. corkscrew pasta
  • 6-8 chopped scallions
  • 1 (15 oz.) can sliced black olives
  • 1/4 cup white vinegar
  • 1/ cup salad oil
  • 1/2 cup olive oil
  • 2 tablespoons water
  • 1 pkg. Italian salad dressing mix
  • 1 teaspoon salt
  • 1/4 cup freshly grated Parmesan
  • Boil chicken and cut into chunks.
  • Cook pasta and drain.
  • Mix pasta and chicken.
  • Add scallions and olives.
  • Mix vinegar, oils, water and salad dressing mix together.
  • Add salt and Parmesan cheese.
  • Refrigerate.
